Imitation Crab Salad

I had a friend some years ago make this salad for me (though it was engulfed in onions).  I enjoyed it so much that I made it from memory, several times over the years. I substituted the onions of course! 

My recipe: 

2 packages of Imitation Crab meat (I make a lot) 

4 stalks of celery, finely chopped

2-4 Roma tomatoes or 1 large tomato

1/2 lemon (to juice)

1/2 tsp lemon zest

1 Serrano pepper, chopped to your liking

1 bunch cilantro, chopped

1 tbsp mayonnaise (I use Kraft olive oil mayo) 

a good size bowl (I have a large Tupperware bowl to store left overs) 


1. Remove crab and rinse in colander. You can shred or chop from there (it should come apart when you mix everything together) 

2. Add everything else and mix. 

Pretty simple right?  The salad is usually the first thing I make if it will be part of dinner, so I place it in the refrigerator to cool. You can eat it on its own or with chips. I sometimes have tostada shells and serve it that way. 

Mr. Foodie loves the crab salad!!
